REPLACING SUGAR
Use equal amounts of honey for sugar up to 1
(cup of sugar). Over 1 cup, replace each cup of
sugar with 2/3 to 3/4 of honey.
When substituting more than one cup of
honey for sugar, you may need to reduce
other liquids in the recipe by 1/4 cup per 1 cup
of honey.
Lower the baking temperature by 25 degrees
and watch the cooking time carefully, as food
with honey in browns much faster.
When baking use 1/4 teaspoon per 1 cup of
honey if baking soda is not already used in the
recipe.
In cookie recipes using eggs, or recipes using
no other liquids, increase the flour by 2
tablespoons for each cup of honey used.
